Hello,

My name is Damian Coleman, I am an Englishman living in Cork in Ireland.

I am extremely new to all this. The missus got me a smoker as a birthday pressie.

So it looks as though she was conned a little and it wasnt really done to a decent standard so it looks like I will have to do a few upgrades to it!! 

So I first had proper smoked food when I went to San Antonio 18 months ago and have been dying to start doing this. Money and jobs stopped me pursuing until this little baby arrived on Wednesday.

I look forward to sharing and understanding more about this as I start this journey!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Hello Damian.  Welcome to the fun.  Mom and Brother live in San Antonio.  San Antonio/Corpus Christi is my old stomping grounds back when I was young and dumb.  Glad to have you.  Keep Smokin!
