So for my second smoke (ever) - I decided to smoke a breakfast Fattie for New Years Day breakfast.
Ingredients:
1lb Mild Pork Sausage
Thick Cut Maple Bacon
Shredded Cheddar Cheese
4 Eggs
Oreida frozen hashbrowns
Salt/Pepper
Gathered all the ingredients:
Rolled out the sausage (in a 1 gallon zip lock bag) and weaved the bacon while the hash browns and eggs cooked (I will wait until the fattie is rolled before applying the bacon blanket next time - it was tough to roll)
Added cheese, hash browns, eggs and some salt and pepper (more cheese next time)
Rolled it up, wrapped it in plastic wrap and put it in the fridge until morning
It was 20 degrees out when I fired up the smoker at 5am - took 3 hrs at 235 (raised to 275 for the last 45 min) to reach 170 internal temp. The bacon was extra thick and didnt crisp up as well as i would have liked, so I put it in the oven on broil for about 5 minutes.
Sliced up and ready to eat - IT WAS AWESOME!
