arting the new year off with some wings… I was supposed to make these last night, but didn’t work out so here goes today. Separated a couple pounds of fresh wings, seasoned overnight (not by choice though) with some EVOO, season salt, paprika, garlic, black pepper, cayenne pepper, onion powder, chili powder, cumin, and a little bit of ginger to throw in a little Asian flare…

Brought the smoker up to 275* to start, figure 60-90 min, then I think I’m going to bump it up to 320* to really crisp up the skin…I’ll keep you posted!
