Just saying hello from Edmonton Alberta, very informative forum. I am currently smoke on a Webber charcoal grill and just got a Smoke Vault 24" for Christmas.
After scouring many conversations I settled on a turkey brine that Chef JimmyJ posted. It was my first turkey and turned out excellent. I have smoked fish for quite a while now but time to expand. Looking forward to doing some bacon soon.
