I had a thought the other day and had to try it out.

A potato cored out like an apple, stuffed with diced jalapeno pepper, extra sharp cheddar cheese, the stem end of the jalapeno with the attached stem exposed also stuffed with ham and cheese inserted into the core opening, and the other end plugged with a piece of the removed core.

The outside was drizzled with olive oil then sprinkled with course sea salt and cracked black pepper.

Then baked or smoked at 225 for several hours, 5 in my case, until the potato is butter smooth inside.

The shape of the ham stuffed potato with the curved jalapeno stem on one end....... HAM GRENADE!!!

WOW is all that was said as the crew ate them.

Nice mellow jalapeno taste infused throughout the potato with the salty ham and extra sharp cheese.

Smooth potato with crispy salt and pepper skin.

PERFECT!

Pineapple corer with slicing blade removed.


Big empty holes needing stuffed quickly.


Cheese cubed and Jalapenos cut in half.


Jalapenos de-seeded and pointy end diced.


One inch chunks cut off the core to plug one end.


Ham and cheese stuffed into peppers and potatoes

peppers plugged into one end and core into the other

then everything held in place with toothpicks so they don't

prematurely explode.......

NOTE the one with no Jalapeno......

It's a DUD!


Drizzled salted peppered and baked to perfection.

Ready to pull the pin one these!

I might not have needed the toothpicks. I will try some without

on my next go round.

This was Christmas Eve and they have been begging for more ever since!

BTW......

The left over cores.....

I made a foil pouch and put the cores, ham, cheese, and diced peppers that were all left in it to bake.

It made a nice package about 4 inches by 8 inches....... LANDMINE!!!

Grenades, and Duds, and Landmines, OH MY! (twisted wizard of oz reference, if you didn't get it)

Mike, I like your variations of the bbq pit boys potato bombs - you tube.  It makes a good way to clean out what ever is in the fridge.  I really like the addition of the stuffed peppers rather than the potato pins.

It figures.... I come up with a great idea and someone else has already done it.

I have never seen the bbq boys on youtube but now they are on my list to go check out.

Oh well, they are quite tasty none the less!

Next go round I'm gonna run the ham through a grinder and use shredded cheese so the consistency of the filling is more even.

I may even try a piping bag to make filling them even easier.

Some filling suggestions that I have received so far have been....

Bacon, chives, and sour cream. Which is a natural.

Ham and Swiss.

Hot Italian sausage, Mozzarella, and pizza sauce. Which I certainly will try.

Roast beef, Swiss, and Horse radish. Layered and rolled to fit the hole in the potato.

Also someone suggested after coring out the potato to use a melon baller to remover more potato to make room for even more filling. Which really opens up the possibilities for stuffing the potatoes.

Something I have tried is dusting the inside of the potato with Tony Chachere's prior to stuffing for an added ZING.

On a different note...... make a boat out of a large potato, deep fry to a crunchy golden brown then fill with potato soup and serve. Just a neat serving idea.

This idea I really like,being cheap I could not see spending 20 bucks for a pineapple corer only to cut it up. Now I can use a regular corer Thanks again Mike

I too had some concern over spending the 20 bucks and cutting it up BUT I work in a machine shop and our best welder could easily reweld it for me if the idea flopped.

I found this at Amazon.....All Ware Stainless Steel Pineapple Easy Slicer and De-Corer 
Looks exactly like the one I paid 20 for, but it is only $6.81

Hope the melon baller idea works out!
 
Mike,  I agree, it is difficult to come up with a original idea anymore, about the best one can do is to make modifications as you have so successively done.

Sounds like you are having fun with your spuds.  Keep up the good work.
