I have smoked these butts for 3 hours. On the smoke setting the grill runs at 185-200 degrees. I've now switched it to the medium setting and it's running 300 on the dot. I'm trying to get and stay around 225-250. Any suggestions? Again this is the Traeger Junior without the digital thermometer. It has a smoke, medium, and high. Thanks for any help I can get.

I think you may be stuck there, with only three settings that's probably what you get. You could turn it back to the smoke setting and go low and slow or just keep it at 300 and be done earlier.
 
Would the smoke setting put too much smoke on the meat though? Running it for that long?
 
I have the tex elite traeger and from what I've seen no. I haven't used it much as I don't like it, I have found it doesn't produce very much smoke on any of the settings.

I prefer my charcoal smokers. I run smoke in my charcoal smokers the entire smoke.
 
I switched out to the Ortech Controller. Goggle Ortech. I think it came to $80 with postage. The unit is easy to install and very happy with it and if you have a problem you can talk to a real person at their Co.
 
I have a friend with the exact Traeger you have and he has the same complaint as you.  He has contacted Traeger with little result.  I own a Rec Tec smoker and that unit maintains its temps almost exact.  They now have a Rec Tec Mini probably meant to compete with the Traeger.  Good luck .
