Hi all,

Yes, I'm a newby from Lake County Florida.  I got a Masterbuilt 2 door gas smoker for Christmas and we plan to break it in for New Years Day with a  few friends over (they all got the disclaimer that it is a trial run and results may not be optimal but I had to invite someone over to eat what we're making!).  I've seasoned the smoker like the directions said and have a butt in the fridge all rubbed up with brown & white sugar, paprika, ginger, onion powder, garlic powder, black pepper and powdered rosemary (recipe rom Meathead's amazingribs.com).  I'm afraid to leave the smoker overnight this first time so I've got a 5am wake up call to get it on for a 3pm meal (torture so I hope that won't be the norm or I can see we might not use it often).  Eventually I'm hoping I can work out a system of putting it on the night before and going to bed and then pulling it off the mid-morning the next day for a mid-day bbq.  Ive done that several times with a Green Egg smoker with great results but I'm hestitant to try that in a brand new gas smoker that I know nothing about. I couldn't find a dual probe (or any probe) thermometer at any local stores today so I hate to say we're going old school with no probe this first go round (I figure if it worked 200 yrs ago it can work now until I can order a fancy monitor to perfect the system). I'm hoping I've found a new hobby and can't wait to try all sorts of meals in this new toy.  Angela

New Years Day fun.  Challenge with new smoker was chips had to be replaced 3 times (will switch to chunks), water had to be refilled 4 times and eventually I gave up on it b/c it wasn't worth opening the door  that often (switching to large pan next time), didn't have dual probe as local stores were all out (ordering one from Amazon), and timing...Didn't want to stay up all night or leave it unattended on 1st run so I had to get up at 430am on New Years Day to serve pulled pork for dinner at 3pm. Ugg.  But overall not bad for a first run and meat was pretty good (not as good as prior runs in green egg that were so much less maintenance).  Meat was slightly dry to me (not terrible, but not jumping with juicy) - saved by sauce which wasn't my plan but worked. BTW - I don't know how to make these images smaller in this posting. Sorry if they come out huge.
