Ok gang I'm attempting my first butt smoke on my WSM and I figured I'd share with the gang since this forum has been so helpful with getting an idea where to start. I made my own rub to start testing and plan to smoke low & slow..
Good plan to have a snack those butts can be sneaky! Are you planning to foil or go naked and what type of wood are you using? I have never spritzed anything on the smoker are you using water in the water pan I do and it seems plenty moist in fhe WSM to me but many use sand or nothing with great results. Experimenting is half the fun after all.
I plan to foil at 165. Then cook until 205. I have read both ways that a mop isn't necessary for a WSM but like you said experimenting is half the fun. The sausages were great but the casings got a little tough through the smoke. All in all I'm having a blast and hope the NYE visitors tonight enjoy my experiments.
