Ok, so I have been hanging around this site for about 3 yrs.  I look at the "Sausage" pretty much every day on my break at work.  My goal is to perfect a meat stick (venison is #1) and smoke some good meals.  Every year at X-mas I have added to my tools (stuffer first, grinder next).  This year Santa didn't bring me a smoker because family stuff was way to busy (my awesome wife is a teacher and unless you are married to one, you really don't know how hard they work for less money than our garbage guy).  X-mas Eve I bought a lotto scratcher and won $100 and I got a gift card from my wife's Mom to Sportsman's, so I bought me the 30.  Not my first choice but the way I look at it is this-- I've seen 100's of folks on this site make far more than my goal with less equipment.  I'm in the game now boys.

It's late, and maybe I'm misreading this, but you bought a stuffer, then a grinder, THEN a smoker? That's kinda the reverse order that most people do, but your results definitely look great!

I like the way you speak about your venison; I feel the same way. And as a teacher myself (and married to one), I completely understand the money aspect.

Congrats on your new toy. I can't wait to see what you do with it!
 
Thanks and sorry for mis-spelling your name.  They were ok, but didn't have much flavor.  I'm hoping now that I have a real smoker, I can control the smoke and temp and get a better product.  We will see?
 
Sorry, I have always had some kind of smoker.  Most of them the charcoal kind and they are not very good for temp control.  You are right about the venison, I think of that like pure gold and when I mess it up, it kills me.  But no matter what is tastes like, I eat it all.
 
I know how you feel about venison.
I once made a guy a whole bag of venison jerky for allowing me to hunt on his land.
Then he told me that he had a few pieces and left the bag out opened.
The whole gallon bag spoiled.
I was so mad!!!
That sweet meat gone to waste for nuttin' :devil:

You'll love your mes 30 as long as you know what you're doing. I've made jerky and pork ribs and they were horrible. Now I have snack sticks in it and they are looking promising.
