So today I stopped peeking through the curtains and decided to join.
I found this site over the Thanksgiving weekend.
The wife bought me a MES 40 on Black Friday from Academy. $199 special

I've been peeking in and learning a lot.
I found I needed a AMNPS and picked one up from a local BBQ shop. $35

Learning and smoking ever since.

So far I've smoked -
Spam, Pork Butt, Whole Chickens, Sausage Links, Kielbasa, Brats, Cheese & Salmon

I'm kinda on a roll....:grilling_smilie:

I got some picts of the Cheese smoke, I'll post when I can....

I'll cook ya some real TX BBQ.
I gotta stick BBQ I've been using for years.

I gotta say.... I'm, kinda the man at traditional TX brisket.
Low and slow with a dry rub.

Hey Gary, Yeah the cold wind is blowin' in here first.
I was smoking Salmon today and really enjoyed the cold weather.
I know as a Texan we are supposed to like it hot but I love a good cold front.

I did my cheese on Sunday when the high was like 61F
Cold smoke time in TX :banana_smiley:
 
Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
