Hey guys,

Grew up living in downtown Pittsburgh most of my life (first 26 years, turn 30 on Friday).  Now I live about 40 minutes NW of the city and work downtown.

My main hobbies are Cars (I have a 2008 Corvette, It's away for the winter now so I needed something else to take up my time hence the smoker) and Saltwater aquariums.

My wife just bought me a MES30 Gen 1 for Xmas as per my Xmas list :)  We did our first cook on Sunday with 3 racks of Baby Back Ribs that we bought at Costco, smoked over a 50/50 mix of Hickory and Apple.  Came out great for a first attempt with the 2-2-1, could have probably used another hour to get a bit more tender but we were starving so we ate them anyway.

My wife bought me an AMNPS package (Comes with 2lbs each of Hickory, Cherry, Oak & Maple) for my birthday which comes tomorrow and I just ordered a Maverick ET-733.

Learned a good bit from browsing these forums already so figured I should start participating.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

I am also a car guy.
