I got a char broil propane smoker for Christmas and yesterday tried my first time on baby back ribs using a guide I read on smoking meat the complete how to.

So first I believe this was a guide for smokers using charcoal or wood because I could not keep my temp. below 325 degrees and the ribs turned out a little on the over done side. So my question is, how do I control the heat ? do I just compensate for the higher heat by smoking a little less time?

Welcome to the board! Use the Search to look up your smoker and see how people use them.

 

Whatever the smoker, sometimes there's no substitute for cooking time. Something like ribs or a butt will need hours to reach a pull-apart texture, instead of being gristly.

Which model Char Broil smoker do you have? Are you relying on the smokers built in thermometer? Most of the factory thermos aren't very accurate. If we know which smoker you have we might be able to help. Also, if you post your question in Smoking Equipment and supplies section under propane smokers you might have more responses.

Just did a little research and that seems to be a common problem with the Char Broil vertical propane smoker. Again I would suggest going to the section for propane smokers. Some people are doing whats called the needle valve mod to help better control temps.

I have the char broil the big easy tru infrared. it is vertical. I will also post in the propane section.
