Just got me a big boy smoker (Masterbuilt 40' from Lowes), an upgrade from a borrowed Big Chief top loader. The Chief did a couple of great batches of salmon, which the wife loved so I didn't get much argument for the new smoker.

The first try with the Masterbuilt was a couple of chickens. They turned out very edible but I am looking forward to improving on them.

I have learned a lot lurking on this forum, but some things you just learn the hard way, like:

Be skeptical of the internal thermometer. I probably didn't have it in the proper position but I ended up taking the birds out way to soon.

If you are not using the lower racks take them out. I ended up cleaning one more rack than I needed to.

Glad you joined the group. The search bar at the top of any page is your best friend.
