Hello there, I joined this forum because I just got a new Weber "Smokey Mountain Cooker Smoker' 18.5" for Christmas and am looking forward to using it to its full potential. A little about myself...... I was a butcher for 14yrs at the start of my career I worked in a small butcher shop where I was involved in the process of making smoked sausage, hams, bacon and most things that can be smoked. I have been out of the meat industry for over 10yrs now, but have been telling my wife for the last few years that I could out smoke any of the store bought smoked meats. She is putting me to the test now. I used an industrial smoker in my career and have never used a charcoal smoker before, I am looking forward to all the useful knowledge I will gain from this forum.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
