First ever prime rib for Christmas

Decided to smoke prime rib for Christmas dinner. I was a little nervous since I've never made prime rib before and didn't want to ruin Christmas dinner. It was on the smaller side at 4.5lb since it was just for me and my girlfriend (we both did the whole family thing for Christmas Eve so just wantd to spend Christmas day together). I'm happy to say it came out PERFECT.


I rubbed it down with a little olive oil and then salt, course black pepper , granulated onion and granulated garlic. 


The put it in the smoker at 230 degrees and got the smoke blowing. Also put a foil pan under it with some beef stock and seasoning to catch the drippings and make au ju's for it.



I pulled it out at 129 degrees IT and let it rest for about 30 minutes the cut off the rib bones and put aside (gonna put those back in the smoker today or tomorrow) and sliced for serving.




And finally, plated with a baked potato....



Came out a perfect medium rare with a nice smokey flavor. Now I just have to figure out how to reheat the un-cut left over portion without over cooking it. Is that even possible???

Awesome job on the PR.  To reheat, just put the entire thing in a 250 degree oven and bring it up to 140ish to serve.  Should take about 1 - 1 1/2 hours.   Should still maintain it's beautiful color and texture.

You should have ate it all the first time! I like to blacken leftover prime rib slices or strips I prefer strips(more seasonings),nice job.
