Pork butts in MES 30"

I'm going to smoke some pork butts today. First one I opened smelled bad so in the garbage it went.

I have a good one that we did not freeze and Amy just went to get more to replace the bad one. We did freeze the bad one which was on sale so I do not know if we did not thaw it properly or it was just old. Anyway I have the smoker on getting up to temp. Qview will follow. I had a little extra time since Amy is at the store getting some butt, I cleaned off the soot at the top of the smoker and scraped off some of the thick stuff on the sides. I cleaned out the bottom and put new foil there. Mine is an analog MES 30" that I have had since the summer but it gets used almost every weekend. It is only 48 degrees outside right now and pretty windy so this will be a little different then the normally warmer less windy days in Vegas.

I am going to use the 12" AMNPTS with the Pitmasters Choice-Hickory/Cherry/Maple pellets. I am filling it all the way. Amy is back so I'm going to rub some butt and carry on. Be back soon.

I did not get pictures of the second butt, but it is in the smoker with the other one now. They have been in there for 2 hours.

Tom, not sure if it was bad but sometimes they get a nasty smell guessing from bacteria.

Did you rinse it then smell it, I have had a few BB that smelled but once rinsed were fine.

I did rinse it off but it still smelled. I did not want to take the chance. I had to open the door awhile to try and get the smell out of the house. I wrapped up the bad one and had Amy drop it in the trash behind the store because I did not want it to stink up my garage. Next time we are at the store we bought it at we are going to get the money back. I still have the receipt.

It's funny that I am having a little problem with keeping the temp. in the smoker where I want it. On a cold windy day it is going too hot inside. I would have bet the farm it would have been harder to keep it hot with all that wind.

The wind has calmed down but it is still only about 50 degrees outside. At 4 hours in the smoke the butts were 159* IT and 147 *IT. Right now the one that was on the middle shelf is 162* IT and the one that was on the top shelf is 149.5* IT. I switched shelves and covered the one that was 162* with foil. I will cover the other one in a while. The AMNPTS is still smoking but is almost done burning the pellets. I am going to try to uncover them before I hit the pull them out temp. to get a little bark. I'll probably crank up the temp. for that.

So overall the smoke is going pretty well CrazyMoon.
 
Outside temp. has dropped to 47 degrees. I'm going out to foil cover the one that is at the lower IT. The ANMPTS has burned out but they both should have enough smoke.

Outside temp. is 42 and dropping. one of the butts is 202* IT. The other is 192* IT.
 
Yes it is going good now the first one is pulled out after it hit 205* IT. The other one is still in there.
 
The second one is pulled out. Made it to 205* IT. I'm letting them rest and cool a little before I make pulled pork out of them.
 
I know this thread is a year old, but i'm hoping your still 'listening' :biggrin:

You did two Butts in your MES 30, did you have room for a pan underneath to catch the drippings?

I am doing my first ones on Friday night and would love to do both and have a pan on a sperate rack, but I think I'm dreaming. I'm guessing I'll have to take 2 racks out and put the bottom Butt in the drippings pan.

But I'd love to hear what you did to cram two in there.

Cael sorry this is so late, I just leave them right in the pan. I have a baster ready to suck out the extra juice. My next ones will be tried like you said, one in the drip pan and one above.
