Christmas Ham/Stuffing

We have a great day outside today for this time of year, so I done the Ham and Stuffing out on the Pellet Grill. 

Waiting to come up in temp a little

I've never had stuffing with ham. What was in your stuffing mix? I love stuffing with chicken and turkey. Having it with ham sounds interesting. Most times we've just had ham, potatoes au gratin, or my favorite Jacques Pepin recipe Gratin Dauphinoise

My father was coming for dinner, and according to him, you have to have stuffing with every holiday meal. I think mainly because he loves stuffing.

Here is the recipe I used. Its pretty much the one I had found on Webbers blog awhile ago. I have since modified it a little to suit our tastes. This is what I used today, I just substitute the broth to whatever meat I am having. The rest stays the same. 

½ cup butter
1 leek stalk removed 
2 stalks celery
12 ounce bottle of Guinness (the other 23 are for the cook!!)
1 cup chopped onion 

2 tbsp fresh sage
2 tbsp fresh parsley
2 cups ham broth
2 eggs
6 cups of dried bread cubes
¼ tsp salt
¼ tsp pepper

I throw everything but the bread cubes in a skillet for about 10 - 15 mins, then add the bread cubes, mix it together and right to the grill for 30 mins on 350*
