Funny how now we think 1.69 a pound is a 'deal' for butts as opposed to the .99 cents we were used to. Regardless, scored one on sale and decided to put it in the smoker on my way to work at 0330 hours and let it ride out all day at 250 in the Smokin' It #3. Did the usual dry rub overnight and tossed it in. On arriving home at 1330 hours it was at 187 IT and climbed steadily to 200 when I pulled it to rest until dinner. It was a beauty.....nice bark. moist meat and we piled it on burger buns with sauce on the side for dipping and some french fries with Apple Streusel Pie for dessert. Christmas meals are now taking center stage so I'm thinking some of JJ's eggrolls and stir fried rice after the holiday to use it up.

Beautiful looking pork there Willie. Nice looking bark.  I know what you mean on prices. I bought 4 butts yesterday at 1.58 to cook for New Year’s game football party. I surely do miss the .99cent days too. Thought abought doing some brisket also but just to expensive for that many people right after Christmas.

Thanks.....roger that on the brisket....a full packer up here, even in Wal-Mart, is $50+ at 5 bucks a pound. ouch......Willie

Tasty looking pork! I got a butcher that sells local pasture raised meats and brisket is $9.99 or more there. I only wonder how long they will be in business. The meats look awesome but to pricey IMHO so I won't try it and won't know what I'm missing.

Chef, I am out of pulled pork and you have inspired me. How could I not make more with this great example!
