Got real brave and decided to smoke my first turkey for christmas eve. Combed through the threads researching for several days. Decided on an overnight soak in a brine recipe i slightly modified. Prepped it and popped it in the smoker at 325 for 3 hours. as Clark Griswold said, If this turkey tastes half as good as it looks then we're all in for a really big treat!

My wife's turkey soup recipe

Cheesy Smoked Turkey Soup

2/3 cup butter (no margarine)
2/3 cup flour
Smoked turkey, cut into chunks
5 cups reserved stock
2 cups heavy cream
4 large baked potatoes, cut into chunks
1 ¼ cups mild or medium cheddar cheese, shredded
salt and Mrs. Dash (original) to taste

Several hours before making soup, cook turkey carcass in a crock pot filled with water. I generally cook mine overnight. Strain the stock, discard carcass.

Melt butter in a large pot. Stir in flour using a wire whisk. Once a paste has formed begin adding (gradually) 5 cups of reserved stock. Once thoroughly blended, add heavy cream. Cook until thickened. Add turkey meat, potatoes, spices and cheese. The soup may be transferred to a crock pot (warm setting) once it is heated through.
