Help with pulled pork

I'm new to smoking and have MES 30". I smoked one butt @ temp of 225 to internal temp of 180 and then foil wrapped and cooked to 200 degrees at temp of 275. It came out great.

I have 2 butts in now. One 10 lbs and one 8 lbs. I made a mistake, though.
Instead of smoking at 225 I smoked at 240 until they reached 180. Then I foil wrapped and moved temp to 275.

Does anyone know if these will come out as tender or any remedial fix I can do now?

Just smoke them til they are 195-205 IT....And probe tender , of course. The temp you cook at is not all that important. It's the temp you cook to and how tender the meat is when done.

I did mine at 250 and turned out good, a bit more fat than I was used to though. Meat was still really tender and tasty though

This is great advice. The cook temp does play a part in the end product, but when it comes to pulled pork it is the IT that counts. Once you break 200 degrees IT the fat and connective tissue really melts away and that is when you reach the point where your pork falls apart.

I Smoked at 225 º  one took 11 hours the other 12  internal temps were 206 º when I pulled them.
