Have an old smokey electric that I love to use, but I'm thinking about adding an adjustable vent on the top opposite the thermometer and cutting a door down at the bottom to add chips when needed.  I'm thinking that putting these in would allow for less steam for slower cooking.

I may need to use an old t shirt to block smoke from escaping while letting steam out.  I'd like to smoke my briskets longer without them getting over done.

Anyone done this?  When I do it, I'll try to take pics of the mods.

It's doable.  You should be able to find what you need at a big box store in the heating area , as well as some scraps of sheet metal.  The tricky part will be fashioning a loading door that seals tight so that smoke doesn't exit thru the door. If you are successful, submit it to the Old Smokey folks.  Wo knows, you might get momentarily wealthy!  Good luck.

Just for fun, have you tried burning a chunk of wood in your O S? Chunks last somewhat longer and may negate the need for a door.

Thanks for reply, chunks are for my next smoke.  The problem with chips is the different sizes, so the smallest burn up too fast and make it smell ashy or burnt instead of smokey.  That may cure the smoke issue so all I'll need to add is the vent.
