Ok so since my smoker is complete I decided to grill a pork lion. I marinaded it for about 2 hours and on the grill it went. First cooked it over high heat for 10 mins on each side. Then put the lion over indirect heat for the remainder which was approx 1 hour. Cooked to a IT of 145. Pulled off and let it side for 15 mins. This thing was amazing. It was tender and juicy. (note the juice on the plate after cutting).
