What's up? I'm pretty new at smoking but I'm pretty handy in the kitchen and on the grill. My wife got me an early Christmas present, a Masterbuilt digital electric 30" smoker. So far I've had Boston butt, duck, chicken, turkey, kielbasa and hot Italian sausage, and today I did some wings. It's pretty much dummy proof. I would love to get into some cold smoking fish and cheese. I plan on getting an A-maze-n smoker tray that I believe would work just fine in my grill sans the fire.
 
Welcome from Louisiana. You will find a wealth of knowledge here from members who are happy to share it. Don't hesitate to ask questions and take advantage of the search bar.

Duck smoked with cherry and apple. First whole bird I've ever tried to smoke. It came out very nicely. I made up a very simple spicy plum sauce for this. I found that the duck actually tasted better served cold than hot. It was not bad hot though.
Boston Butt with a pretty basic rub (salt, paprika, pepper, brown sugar, cumin, garlic and onion powder, oregano, and ground cayenne). Not bad for my first swing at smoking. Pulled it and served it to my family with cole slaw and Eastern Carolina style sauce.
