I go by Trailsend, use the same name on pretty much any of the sites I visit.  I am from South Dakota.  I currently have a wood/charcoal smoker that was converted to propane, It has worked ok, I have never been able to control the temperature very well.  I have turned out some good ribs, brats, pork lions, etc.  I think some of it has been more luck.  Because I haven't been able to control the temperature I don't think any of it is turning out as good as it could be.  I have ordered a Cabela's Pro Series 50.  It should be here in about a week.  I know I have a lot to learn and thought this might be a good place to find some answers.

Welcome to the forum.  The search bar at the top of the page can be your best friend.  Have questions or problems, just search them.  You hit the nail on the head for great smoking and that is temperature control.  It is imperative to be able to control your temperatures in order to obtain that low and slow cooking method all of us love.  Good luck with your new unit.
