Ok, 2 questions.
First question, I have a bone-in, pre-smoked PR that went to 125 IT. It's frozen solid. What's your recommendation on reheating to 133-135 medium rare?
Second question, I have a bone-in PR that I took to 125 IT that is NOT frozen and handed over as a gift. Once it gets to its new home, at what temp would you recommend reheating to an IT of around 133-135 medium rare?
