  After months of waiting for my MES 30 to arrive I am up and running.   I plan to light smoke a turkey for Christmas, may be a pork loin also, but for a first time smoke I am doing a 4 pound pork roast using adler chips brought down from Oregon along with the smoker.

   I bought a Polder digital thermometer and just plugged it in after 2.5 hours of smoking. The meat is at 137 so things are looking good.  The plan is to slice it up, bath it in BBQ sauce brought in from Alabama, and make sandwiches to eat during happy hour. 

  I got no pictures, no smart phone, no camera. Just a poor boy living in Catemaco, Veracruz, MX.
