I have 2 questions so far, with many more to follow !
1st. Should I add a water pan ?
2nd. How do I determine how much "Charcoal and Wood" to to start with?
No water pan.
As for how much to start with that will depend on how much food and what temperature and how long the smoke will be. What is the outside temp? Is the wind blowing?
Start out with a chimney full and see what that does for temp and time. Adjust from their. Spend some time getting to know your smoker.
