Since this contains bacon as well as crab and shrimp, I chose to post here in General. If incorrect, please relocate accordingly.

Case,
I just wanted to say thanks for the thread you created here: http://www.smokingmeatforums.com/t/166691/dungeness-crab-egg-muffins. It helped my got off my backside to make some of these wonderful muffins for the wife and daughter. Instead of doing just Dungee crab though, I chose to do 3 flavors of bacon, shrimp and crab. Smothered them afterwards with some Hollandaise sauce and chased with a simple potato and bell pepper side dish. Homemade parchment paper cups as Case did in his original thread. Egg batter containing chives, meat, Mexican cheese. Baked with the potatoes at 425* for 25 minutes. The women of the household liked the bacon ones the best. Go figure!

I tell ya one thing.  Next time I make some of these muffy's with bacon, I'm going to coat the bacon with some of Jeff's rub before I cook them.  I can see it now......Egg muffins with Jeff's rubbed bacon.   Hmmmmm, careful..... daughter might consider moving back home, if I do that :yahoo:

That sounds like a tasty option, heck I might even move down to your place, help you eat all that salmon and crab you have floating around! :ROTF

That's where I learned how to make them! My family has made them for years when we all would get together. Makes feeding a houseful easy!

We always do spinach and eggs parmesan. Sautee a lot of minced garlic (usually 5 or 6 big cloves) in butter, then add a bag of baby spinach and wilt it. Put a dozen eggs in the blender with a half cup of heavy cream, salt & pepper to taste. Scramble egg mix with spinach, just before done add about a cup of freshly grated parmesan cheese. Really tasty!
