I am hoping with the mes I will not need my fireman aka husband and be able to smoke more on my own and when I want since I have fell in love with it.
With our brinkman we had some good results but had a very hard time keeping a consistent temp.

3-2-1 method would be the same with the MES which means wood smoke isn't necessary during the foiled part and it's up to you if you want to apply additional wood smoke during the final hour when you're mopping or basting ribs (there are those who do a similar method for brisket over a longer period of time).
I'm one of the many here who touts the A-MAZE-N Pellet Smoker (it's a metal tray that fits inside the smoker). When I first got my MES 30 Gen 1 I used wood chips the first 3 times or so but found them a big hassle since I was always adding chips every 20-30 minutes. Once you get the AMNPS technique down , it produces thin blue smoke (TBS) for 12 or more hours, depending on various factors. I always recommend to start out smoking with wood chips to see if someone likes it or not before they decide to order the AMNPS or the other A-MAZE-N smokers that use wood dust.
