Hi, just join the site and looking forward to my journey of curing/smoking meat. I tried it years ago with a big grill and hot plate with some wet chips, didn't work at all. My wife has had enough of me trying to make jerky in the oven.  Like many newbie's I'm jumping right in, started building my smoker yesterday. Ill do a build along thread once I get a little further along.

Ive looked around a bit and this seems like a great community, and I look forward to some friendly communication.
