Ok, here's what I ended up with.
Keilbasa (OMG this smells so good!) Lightly seasoned with a lot of garlic and smoke.
Keilbasa bits, my answer to little smokies
The cajun sausage (spicy and with a little cayenne). neede more smoke
Keilbasa and Cajun
BTW evidence that the amps and the chip tray in a MES40 can play well together. Still working on how to do it with the cold smoker attachment.
All white ash.
