As noted in the pork forum, I purchased a new Kamado Joe (Big Joe) recently at a nice deal and have been cooking like crazy in it ever since....here was my first beef cook - short ribs (one of my favorites)...they were very good, not my best, but very good nonetheless. Strange thing too was no real smoke ring on them which was interesting. The smoke was there in the flavor, but could have definitely had more. Still a good cook and many more to come...
These were kosher salt, coarse black pepper, garlic (Hard Eight rub). Mopped with 1:1 Wocestershire and water. 3 ish hrs on the smoke and 2 or so foiled and another 1 maybe back on.
So, good beef short ribs, but Joe is beggin for a brisket. That, other than steaks, will be my next beef cook on here just as soon as I can find a packer without an astronomical price on it. Cheers!
