Question is to cure or not to cure. Also what temp do you recommend to smoke trout. Low "cold" Smoke or higher. I will probably smoke till trout is 145. What are the more expert smokers advice. I have only had my MES about a month and I am still learning.

The 3men.com website is no longer, but the brine lives on. It's my favorite. Just wish I would have saved their smoked fish dip recipe before they decided to take the website down. That stuff was killer!
