As you all know I got some hocks and trotters a little over two weeks ago. I built a sweet maple cure and threw some in the brine buckets and they were all happy happy. I had the hocks cut in 1/3's because they like cooking that way better. I don't know why, ask them.

My first appoligy, no pictures of 'em in the bucket of flavor in the project reefer. I don't know why, they were just sitting there for 2 whole weeks. Just lazy I guess. But just picture in your mind a white polyethylene John Deere tractor transmission oil bucket. Really clean, with two gallons of Pop's marvelous curing brine, suchs a beautiful golden amber color. Its filled with hocks and trotters with a nice clean freezer ziploc filled with water to hold 'em in the bucket. Hey the trotters looked so happy I thought they were going to get out and dance!

So about two weeks later, I pulled 'em, rinsed 'em, dried 'em, and back in the reefer last night to dry on the racks.


Today I fired the smoker up, high heat, vent open, AMPs smoking. Well it was just starting, give it a break!


I turned the heat back down low, and kicked in the turbo charger for 4 hours of great pecan shell smoke.


Tomorrow I am thinking beans!!!! I am smelling my hands a lot! No I am not a perv, I am a lover of smoke!  They are in the reefer catch a mellow, tomorrow into the freezer. Well most of them anyway.

I'll try and remember some more pictures.

Thanks C-Man. Ya know its getting really hard to find the good stuff. I do miss the old meat counter at the little neighborhood "Superette".  But Its also nice to ask for dried ancho chili peppers and actually expect to get some.

All pecan smoke! OMG I love that smell! Its a good thing they didn't bottle it as a woman's toilet water, I would been married long long ago. I mean thats better than a rub of vanilla behind each ear. That always got ya ears nibbled on!

OK, the hocks rocked! Or I should say hock. The greens were just right, I always do mustard greens w/ pinch of sugar.




I am guessing you can tell which plate is mine! Oh and a bit of Chow-chow and a scallion........ Mmmmmmm.


Ok, Ok..... I know cornbread are square, but I only made a small pan.


The mustard greens were great, cornbread would have been great except with the mustard greens and the outstanding pintos I'll say the cornbread was only good. Fresh fried taters to top it all off........ Its a great day after the holiday meal. I added no seasoning except onion and hock to the beans, not even salt and pepper, outstanding! Used a sweet maple cure on those hocks and trotters and its amazingly good.

OK, Thats all there is. Believe me, its enough! What a great meal, only way it could have been better would have been some of my own bacon in the mustard greens but alas its all gone. Come on winter.

Well so far have andouille, hocks, and trotters done. Need to do some cajun sausage, Tasso, and maybe some more of Pop's breakfast links (but needs to be done is small quanties I am sure). Oh and I think I have some keilbasa to try. AND of course bacon!!!!

Its really nice to make all this and stuff it in the freezer then enjoy it all year.
