Replacing one smoking habbit with another

Hi everyone,

I'm Mark from Denver, CO. I've been lurking here for a while in preparation for my new MES 30 which is on order currently from Cabela's. I quit smoking cigarettes not long ago, and am replacing that disgusting habit with this one (among other things :) )

 

I look forward to learning from everyone here.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Thanks for the welcome :)

 

Had a nice surprise this morning. When I ordered my MES and the extra smoke generator that attaches to it from Cabela's on black Friday, the original estimate was that it 'may' ship at some point this week. But this morning I had my tracking number and they are delivering it *today*. I have a few bags of various smoking woods on the same truck, looks like I'll be seasoning this puppy this evening. Now I have to figure out what to smoke first. Going to spend some time perusing the forums today for sure.

Chicken is a good first smoke. It is cheap and forgiving. In a MES you will have to crispy up the skin in the oven or on a grill. A fatty is also a good starting place. Remember to post a Qview or Bottom.gif

Welcome to the addiction Mark!  And to SMF! 

 

Yep, chicken is a very good first smoke.  Always a winner.  Throw some sausages in with it too.  They are super easy and oh so tasty just lying on the plate, between slices of bread, in eggs, or cut up in beans, soups, and stews.

Welcome  to  Smoking ... youll have it figured out in no time... Our mentors site  smokingmeat.com right hand of the page is a very good place  to start.. he has some recipes that will perfect you .. Iv'e never been disappointed .. the rub recipe is the Bomb!

Thanks for the awesome tips guys :) I have a couple of Weber grills.. one charcoal one propane I can finish off the chicken in there once it hits the temps we want. My wife prefers skinless, but not me.. rubbery chicken skin sounds a little nasty so I'll definitely heed that advice. And sausage sounds like an excellent addition. Starving just reading the replies. I'll take some pics when we get setup. We have a recipe for a rub we usually use on our briskets that turns out great but I'm going to experiment, I've seen some great ones here to try. I've been reading that pecan is a good wood to use on poultry, I have some showing up today. Will probably be tomorrow before I fire it up for cooking. Our UPS guy doesn't usually show up till after 4pm and I obviously have to season it. Kind of funny, I wasn't expecting the smoker to show up for at least another week, but knowing it will be here today and I feel like a kid at christmas. I look forward to chatting with you guys down the road.

I have found an even easier meat to for your first smoke and it's burgers. You might think that burgers aren't first on your mind but they are fantastic! And super easy! But chicken is always easy too!
