I acquired a food warmer and want to convert it to a vertical smoker kind of UDS style.

I'm thinking charcoal basket with chunks with a full size sheet pan as a diffuser.

Exhaust i'm thinking 2 2" nipples.( this is what I have)

Intake I was thinking of cutting a hole in the door a making a slide gate.

What do you think?

 

Do you have any Ideas I could incorporate?

Any idas will be greatly appreciated.
 
Wolfmann I hear you. Right now I'm using a stickburner and love it. Only thing is sometimes you cant babysit all day and was looking to still play with fire.

Funny thing also I ended up finding out what was wrong with the unit ( melted connection) and now have it working like new. I can get it to 220 degrees.

You really have me thinking now.

I'm pretty much done with my new build. I ended up repairing the electric warmer. So now it can be used as both warmer or smoker. I decided on keeping with my original idea in using charcoal and chunks. We made a 2 inch intake in the door with 2 2 inch exhausts all with slide dampers. The basket will be right above the electric elements for the warmer with a full sheet pan right above as a diffuser. The best part is how adjustable the will be. I can go with 4 inch spacing or whatever i choose as all the hangers are adjustable. I'm also going to try cooking on cooling grate in the sheet pans for less mess to clean up. Hopefully the moisture in the pan doesn't effect the bark on what in cooking. All I need to do is fire this thing up. I just wish the weather would cooperate here.



Bolted together a charcoal basket out of scrap. I'm hoping to test this out on Sunday for the game.
