Weekend Tri Tip

Well the ham and turkey is gone. I smoked my favorite cut of beef, Tri Tip. I guess its a california thing. I picked up the tri tip at my local costco. Seems to be the only place in texas , that has it on a regular basis. Much easier to find in california . I smoke for a 145 IT. Here are some pics of what it looked like. Served it with a homemade salsa and guacamole. I roasted the tomatoes and jalapenos after I had taken the tri tip out.

I've been missing tri tip this year. Just going to have to break down and spend the dough!

Dang that looks good. I'm making a run to costco Friday for Christmas cheese to smoke so maybe a tritip this weekend.

Makes me want to get away from fish for awhile.    Elchicano,  what rub, seasonings or preparations did you apply to the Tri Tip before it went into the smoker?

Looks good, although I prefer mine medium rare. I wish Costco still had tri-tip in north Texas. They stopped carrying it shortly before Memorial Day up here.
