So I smoked my second turkey over the weekend as I am a noobie smoker.  I tried a practice turkey a few weeks ago and it turned out dry dry dry.    And it did not look to appetizing.  I found a Jalapeno Brine that I tried but forgot to pick up crushed red pepper so I substituted dried sweet peppers.  The taste was ok but as I said it was dry.  The first pic is my first turkey.  The 2nd through 4th pic was my second attempt.  The turkey looks a bit dark but omg it was moist.  I was cooking this turkey for the fiancés family so I had to tone down the spice a bit as they eat most things a bit bland.  I did a mix of garlic powder, onion salt, cayenne pepper ( unfortunately not enough there was no heat) chili powder, coriander, cumin and paprika.  2 apples and a onion quartered in the cavity and mayo and a the rub under the skin with olive oil on the skin.  I applied olive oil about once a ever hour or so to stop the skin from drying out.  The family loved it but they are an impatient lot that is for sure.   Thanks to all who post and made my Thanksgiving bird a success!
