Man I do love some beef ribs in the smoker ... I saw you had some issues getting the MBES30 to start up ...I've had the same issues ..the only way it seems to want to work is if I use the remote ..I think I'm going to call them Monday and see what it will take to get another controller .. its about 3 years old so I guess they going to want some $$$$

I wish I had seen this post yesterday ... I was wondering about the Mats when I ordered the pellet burner

What temp do you normally smoke these ribs at?    What's the best wood to use?   Think I need to break away from fish for awhile and try some ribs.
 
Craig, morning....  I generally smoke all meats below 210....    BUT, after sterilizing the smoker at 275 and drying the pellets, the meat goes in at 275 while the heat is turned off... and gently cools down to 140 ish to start the smoke...   then the heat goes up to 190-200 ish to cook the meat...   While smoking, I keep the temps below 140.....  
 
So in case of these ribs, after you have loaded the smoker and let the temp go down to 140, that is when you start smoking?  If so, how long are you typically smoking at 140 before you raise the temp up to 190+?  Around 2 hours?

I generally smoke under 140 and closer to 110 ish....   after smoke, turn the heat up to cook....
