Meaty beef ribs are hard to beat,  (And find).  I've got one grocer near me where I find them about 3 or 4 times a year.  I buy them whenever I do find them.

Am I correct that you only used Montreal Steak and Kosher Salt on your ribs?    So simple, so delicious looking.
 
When doing ribs, I have found a really good pellicle hold the moisture in the meat... The shiny surface is the pellicle... And there's a bit of fat oozing out.... they sure were good...
 
Yum those look meatily delicious! Had beef ribs for the first time two weeks ago. The flavor was great but they were a little lean on meat. I'll keep an eye out for these kind from now on! I'm hooked and I want more!

I haven't posted in awhile. I love beef ribs more than pork. I had same problem rib bones no meat or very little. We have a couple of Asian markets here in Northern California they have beef bibs with a boat load of meat like a 1-1/2". They come in 4 ribs in a rack. They are 4$ to 5$ per Lb. when you buy tell them no cut. They want to cut them cross cut. Good luck Merry Christmas

Hey Dave don't know how I missed your ribs till now. I love Beef ribs, They look great good job.  My trouble around here is they pretty cut off all the meat before they put them out. I do like good meaty beef ribs

The best "BEER ribs"  I've found come from full kegs although the quart bottle size aren't too shabby.

Gonna have to give this a shot, found a few wrapped packs of frozen beef short ribs tucked in the freezer from the last side of beef, looking like a tasty weekend.
 
Next time you make ribs let me know, I am only 140 miles or so from you, I will be up for dinner.,....
