Smoking leftover turkey slices?

No, I did not smoke our turkey for Thanksgiving but question if anyone have ever smoked cooked leftover turkey slices, chunks, etc?   Cold smoke or maybe at a low 225* temp for an hour plus?  We have a lot of leftovers and thought "hey! why not smoke some chunks?". 

Any suggestions?
