I guess that high heat in oil overpowers 2 hours of cold smoke.
Maybe you'll taste some in the cold leftover meat for sammies??
I usually fry two turkeys for my gang for Thanksgiving. This year I fried one and smoked one. I buttermilk brined the smoked one overnight. The fried turkey was a hit as usual and I must say I enjoyed it better than the smoked one as well. Nothing wrong with the smoked one just the fried was better. I had hoped to hear you say you could get some smoke flavor with your fried turkey but I guess not. I think I'll be putting the smoker away for Thanksgiving turkeys.
