So it is a beautiful 24° here in Michigan so lets smoke some meat (the smoker temp keeps the snow from accumulating as it falls).

I started with Scotch eggs (have never made these before).

Moved on to some Pork Tenderloins (butterflied, flattened, sprinkled with Jeff's Rub, and stuffed with onion/garlic/broccoli/Mushroom and cream cheese then rolled and tied)

And Last but not least a nice Beef roast (with a bunch of pork neck bones so I can make some stock).

All smoked with apple wood Roast not ready to come off yet.

Thanks for looking.

Thanks, I forgot to get a picture of the roast sliced up but I pulled it at 145° and it was a perfect Medium Rare.

Thanks and glad I could be there to remind you. I finished the last scotch egg this morning for breakfast. Going to have to make them again.

link that all looks great I never heard of scotch eggs, are they wrapped with breakfast sausage?

Correct, I just used a Jimmy Deans mild. They were really good.
