With Thanksgiving coming up this week, turkey is on everyone's mind. Let's help answer a major question on many people's mind: Buttered skin or Not?
 
Bride butters under the skin.... Compound butter at that... garlic, onion, and what ever else she throws in it... Then salts the bird all over, inside and out.. using 1% Kosher salt... 22# bird.... 100 grams salt... Salt dries the skin so it is crispy...
 
I agree with the above, compound butter under the skin.  May sound odd but to help crisp the skin I put mayo on it.  It works for me and there is no mayo taste after it cooks.
 
I like the compound butter under he skin. I also rub some on the outside as it goes in, then in the last hour or so I like to paint it with melted butter 2 or 3 times. I find it really helps it to brown evenly.
