So I have not always been a Rib fan but the wife bought some spare ribs the other night and asked me to smoke them for her, she said if I didn't she would make me take her out for shopping and dinner!!!! SO we are smoking ribs I said to her. LOL
After all the great reads on here I decided to do the 3-2-1 and let the show begin.
Forgot to take the membrane off - not a good start, already had them seasoned up when I remembered that step.
and getting them lathered up

up close, I really like this rub.
besides making sure the meat is cold make sure your beverage is also.
Tried to get a better shot but if you look close you can see all the moisture out of the pellets after microwaving them for 2 min. put a paper towel in with them so the paper towel absorbs the moisture. Another trick I learned from this site.
amps loaded up and ready to go.
Out of the fridge from a overnight nap and hit them again with more rub.
So into the smoker they go at 225* with the amps going for 3hrs
At the 3hr Mark - look and smell great.
Now we are going to wrap in heavy foil and back into the smoker for 2hrs when I wrapped these I put just a dab of Apple juice in the foil with them.
Temp is staying right there today.
Now after the step two,
and back into the smoker not wrapped. last hr hit them with some BBQ sauce
and Done after 6hrs.
little pull back but not much.
and the rest of the course
Scalloped spuds
Corn
And the Happy ones, they said they love it and I guess that is what counts. I will say I did not mind these that bad either.
That boy is going to eat me out of house and home I swear!! Sorry no plated view, they were all too hungry to let me snap their pics.
