I saw where Jeff recommends turkey should only be 12 to 14 lbs. for smoking. I have already bought my bird which is 20lbs. Could I sptit the bird down the middle and smoke it that way? Appreciate any suggestions.

If your smoker is big enough you can spatchcock that yardbird. It will take way less time, cook evenly and get better smoke penetration.
This tutorial is for chicken but works just as well on a turkey. I did a 27 pound bird in this way last year and it was great!
