Doing an early Thanksgiving meal. We have both sides of the family coming in for Thanksgiving. First set is in this weekend, so we're having a meal tonight.

16# turkey is on the smoker. Brined it for 12 hours in 2 gallons of water + 2c salt, 2c sugar, little garlic and onion. Dusted with black pepper, salt, and a little garlic and paprika. Cooking at 300 with a mix of oak and cherry. Mmhmm.

I left the lid shut but opened once to refill the water pan and another to probe it.

It finished way earlier than I expected. 3.5 hours. I was thinking it would be 4-5. Pulled it at 170 IT.

Thanks old school! You're probably right on the timing thing. Keeping the lid closed makes a big difference.
