3 Lbs of pre-sliced Top Round

Sea Salt

Black Pepper

Garlic Powder

Cayanne

Finished with a little Bourbon/Brown Sugar seasoning

Pecan Chips

 

165* for 2.5 Hrs

I saw no reason to add sodium nitrate for three pounds that would be eaten in a day. Salt and other seasonings (as listed) were rubbed in 24 hours prior to smoking.
