Full Meal Deal Beans in DO

This is a very adaptable recipe to whatever you feel like throwing in the pot. I recently did a pork shoulder so had this big bone to use and had some Mayo Coba beans for a different twist. I like a can of Rotel in my beans along with some tomatoes for color. Long story short, this batch had smoked shoulder, bacon, ham chunks and a lonely Kielbasa. Added a good shot of ham base at the end of a long simmer. Basic recipe is as follows....

cook off a # of bacon, remove. Add onions, garlic & green onions to pot and saute up. Add soaked black eyed peas (or navy beans) to pot with water to cover. Add a can of stewed toms or Rotel (yum), bag of okra, Japs, cayenne and some S&P. Bring to simmer for about 15 minutes. Add in a pound of diced ham and a pound of smoked SS or such and put bacon back in. Finish in the smoker or allow to finish on the stove, stirring until beans are tender. Added bonus, it makes the house smell divine...

Serve with fresh cornbread....some like it poured over the cornbread, some like CB on the side.

It looks GREAT! From the looks of things that dutch oven has seen it's share of goodness.
