Good morning, thank you allowing me access. I've been lurking in the background for awhile and reading all the great hints and successful (and not too great) threads. I used to use a Big Chief but couldn't get the meats right and had to finish in the inside oven. Finally broke down and bought a new digital Bradley and WOW what a difference. It's working right now in its 3rd cheese cycle. Just can't seem to hang on to any since started sharing them with some brew. Didn't know I had that many friends, family coming out of the woodwork.  Only thing I can add at this point, is I tried both the Maverick and Redi Check thermostats and I still just trust the Bradley to do its own thing. Sometimes the temp. goes high but it usually adjusts itself back down. Ribs, Ham, turkey and a whole bunch of cheese and salmon have been perfect.
